  • 2 cups vegetable broth (low-sodium)
  • 1 cup pumpkin puree (fresh or canned)
  • 1 medium sweet onion, finely chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 4 fresh sage leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the onion and measuring out the rice and pumpkin puree.
  2. In a large saucepan over medium heat, melt the butter and sauté the onion until translucent (about 5 minutes).
  3. Add Arborio rice and cook for another 2 minutes until slightly translucent around the edges.
  4. Gradually add warm vegetable broth one ladle at a time, stirring continuously until most liquid is absorbed before adding more.
  5. When the rice is tender but al dente (about 18-20 minutes), fold in pumpkin puree and chopped sage.
  6. Remove from heat and mix in Parmesan cheese and remaining butter for extra creaminess.
