- 4 cups low-sodium chicken broth

- 1 cup sharp cheddar cheese, shredded
- 2 green onions, sliced (for garnish)

Instructions
- Peel and cube the Russet potatoes to ensure even cooking.
- In a large pot over medium heat, melt the butter and sauté the onions until translucent (about 5 minutes). Add garlic and cook for another 30 seconds.

- Add the diced potatoes and chicken broth to the pot with onions. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Blend part of the soup using an immersion blender for creaminess. Stir in heavy cream gradually while warming through.
