- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz spaghetti or fettuccine
- 1 can (10.5 oz) cream of mushroom soup
- 3–4 cloves fresh garlic, minced
- 1 cup shredded sharp cheddar cheese
- 1 tsp Italian seasoning
- 1 cup bell peppers, diced
- 1 cup onions, diced
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Chop chicken into bite-sized pieces and dice bell peppers and onions.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden brown for about 5-7 minutes.
- Once chicken is cooked, remove it from the skillet. Sauté the bell peppers and onions for 3-4 minutes until softened.
- Stir in the minced garlic and Italian seasoning; cook for another minute.
- Add cream of mushroom soup with a splash of water or broth to thin it out; mix well.
- Combine cooked pasta with the chicken mixture in the skillet, then sprinkle cheddar cheese on top and let it melt before serving.
