- 2 cups butternut squash, peeled and cubed
- 8 oz elbow macaroni
- 1 cup sharp cheddar cheese, shredded
- 1 cup whole milk
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 tsp garlic powder
- Salt and pepper to taste
- 1/2 cup panko breadcrumbs
Instructions
- Preheat oven to 400°F (200°C). Roast butternut squash on a baking sheet for 25-30 minutes until tender.
- Cook macaroni in salted boiling water until al dente; drain.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk until thickened.
- Remove from heat; stir in cheddar cheese, garlic powder, salt, and pepper.
- Mash roasted squash and combine with macaroni and cheese sauce.
- Transfer to a greased baking dish, top with panko breadcrumbs mixed with melted butter, and bake at 350°F (175°C) for 20-25 minutes until golden.
