  • 1 bay leaf

Instructions

  1. Wash and chop all vegetables into bite-sized pieces for even cooking.
  2. In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic; sauté until fragrant and translucent (about 5 minutes).
  3. Add carrots, potatoes, zucchini, and bell pepper to the pot. Stir occasionally until they start to soften (about 8–10 minutes).
  4. Pour in vegetable broth along with thyme and bay leaf. Bring to a gentle simmer while stirring well.
  5. Season with salt and pepper after about 15 minutes of simmering. Adjust flavors as needed.
  6. Cover partially and let stew simmer on low heat for another 30–40 minutes until vegetables are tender yet intact.
