  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1/2 cup plain or Italian-seasoned breadcrumbs
  • 1 large egg
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium Yukon Gold potatoes, cubed
  • 4 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 tsp fresh thyme
  • 1 bay leaf
  • Salt & pepper to taste

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, minced garlic, chopped onion, egg, salt, and pepper. Mix gently until just combined.
  2. Heat olive oil in a large pot over medium heat. Sear meatballs until browned on all sides; set aside.
  3. In the same pot, sauté sliced carrots and cubed potatoes for about five minutes.
  4. Pour in beef broth and diced tomatoes; stir well and scrape any browned bits from the bottom of the pot.
  5. Add thyme and bay leaf, bring to a boil, then reduce heat to low and simmer for 30 minutes.
  6. Return meatballs to the pot and simmer for an additional 15 minutes until cooked through.
