- 1 lb ground beef (80/20 lean-to-fat ratio)
- 1/2 cup plain or Italian-seasoned breadcrumbs
- 1 large egg
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium Yukon Gold potatoes, cubed
- 4 cups low-sodium beef broth
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 tsp fresh thyme
- 1 bay leaf
- Salt & pepper to taste
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, minced garlic, chopped onion, egg, salt, and pepper. Mix gently until just combined.
- Heat olive oil in a large pot over medium heat. Sear meatballs until browned on all sides; set aside.
- In the same pot, sauté sliced carrots and cubed potatoes for about five minutes.
- Pour in beef broth and diced tomatoes; stir well and scrape any browned bits from the bottom of the pot.
- Add thyme and bay leaf, bring to a boil, then reduce heat to low and simmer for 30 minutes.
- Return meatballs to the pot and simmer for an additional 15 minutes until cooked through.
