  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable stock
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 2 tbsp lemon juice
  • Fresh cilantro (optional for garnish)

Instructions

  1. Heat 2 tbsp olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic, cumin, and curry powder for about 1 minute until fragrant.
  3. Add rinsed red lentils and vegetable stock to the pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes until lentils are tender.
  4. Use an immersion blender to puree the soup until smooth. Adjust consistency with more stock if needed.
  5. Stir in lemon juice before serving; season to taste.
