- 2 medium poblano peppers
- 1 medium yellow onion
- 4 cloves garlic
- 4 cups low-sodium chicken broth

- ½ cup fresh cilantro, chopped
- Salt and pepper to taste
- ½ cup sour cream (optional)
Instructions
- Chop the onion and mince the garlic. Roast the poblano peppers over an open flame until charred, then peel and chop.
- In a large pot, heat oil over medium-high heat. Season chicken breasts with salt and pepper; sear until golden brown on both sides (about 5 minutes per side).
- Add onions and garlic; sauté until translucent (about 4 minutes).
- Pour in the chicken broth and add roasted poblanos. Simmer for about 15 minutes.
- Remove the chicken, shred it using two forks, then return it to the pot.
- Stir in cumin, lime juice, cilantro, salt, and pepper to taste; simmer for an additional 5 minutes.
