  • 2 fresh salmon fillets (about 6 oz each)
  • 1 cup jasmine rice
  • ¼ cup low-sodium soy sauce
  • 2 tbsp raw honey
  • Juice of 1 lemon
  • 1 tbsp sesame oil
  • 2 green onions, finely chopped

Instructions

  1. Rinse jasmine rice under cold water until the water runs clear. In a medium saucepan, combine rice with 1¾ cups of water, bring to a boil, then reduce heat to low and cover for about 15 minutes until fluffy.
  2. In a small bowl, whisk together soy sauce, honey, and lemon juice for the marinade.
  3. Place salmon in a shallow dish and pour half of the marinade over them. Let marinate for 15-20 minutes.
  4. Heat sesame oil in a skillet over medium-high heat. Cook salmon skin-side down for about 5-6 minutes until crispy; flip gently.
  5. Add remaining marinade to the pan after flipping salmon; let simmer for an additional 4-5 minutes until cooked through.
  6. Serve salmon over jasmine rice, drizzling any leftover glaze on top and garnishing with chopped green onions.
