This vibrant dish combines succulent chicken breasts marinated in a zesty blend of olive oil, fresh lemon juice, and aromatic garlic, served alongside colorful sautéed vegetables. Perfect for weeknight dinners or weekend gatherings, this recipe guarantees compliments and satisfied taste buds.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil (plus more for sautéing)
  • 2 tbsp fresh lemon juice
  • 4 garlic cloves, minced
  • 2 cups mixed vegetables (bell peppers, zucchini, onions)
  • 2 tsp dried herbs (Italian seasoning or Herbes de Provence)
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Chop mixed vegetables into bite-sized pieces and mince the garlic.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, dried herbs, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes.
  3. Heat olive oil in a large skillet over medium heat. Sauté the chopped vegetables until tender and slightly caramelized (about 5-7 minutes).
  4. Push the veggies aside and add the marinated chicken breasts to the skillet. Cook each side until golden brown (approximately 6-7 minutes per side) or until they reach an internal temperature of 165°F (74°C).
  5. Mix everything together in the skillet until combined. Serve hot with fresh herbs for garnish.
