  • 1 cup long-grain rice (Basmati recommended)
  • 2 juicy lemons
  • 1/2 tsp turmeric powder
  • 1 tsp black mustard seeds
  • 8 fresh curry leaves
  • 12 green chilies (adjust heat to preference)
  • 1/4 cup peanuts or cashews (toasted)
  • Salt to taste (sea salt preferred)

Instructions

  1. Rinse the long-grain rice under cold water until it runs clear.
  2. In a pot, combine rinsed rice, 2 cups of water, and a pinch of salt. Bring to a boil, cover, and simmer for 15-20 minutes.
  3. While the rice cooks, zest and juice the lemons into a bowl.
  4. Heat oil in a pan over medium heat; add mustard seeds and curry leaves; sauté until fragrant (about 30 seconds).
  5. Add chopped green chilies and peanuts/cashews; stir-fry until nuts are golden brown.
  6. Fluff the cooked rice with a fork, then mix in the lemon zest, juice, and sautéed spices.
