  • 1 lb lean ground turkey
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced fire-roasted tomatoes
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup bell peppers, diced (mixed colors)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by dicing the onion and bell peppers, and mincing the garlic.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté the onions and bell peppers until softened.
  3. Stir in the minced garlic for about 30 seconds until fragrant.
  4. Add the ground turkey to the pot, breaking it apart with a spoon as it cooks until browned (about 5–7 minutes).
  5. Mix in the kidney beans, black beans, diced tomatoes (with juice), chili powder, cumin, salt, and pepper. Combine well.
  6. Reduce heat to low and let simmer uncovered for 20–30 minutes, stirring occasionally.
