Description

Spicy Chickpea and Quinoa Salad is a vibrant, nutritious dish bursting with flavor. Perfect for any meal, this salad is quick to prepare and will satisfy your cravings.


Ingredients

  • 1 cup quinoa
  • 1 can (15 oz) chickpeas
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • Fresh parsley
  • Juice of 1 lemon
  • 3 tbsp olive oil

  • pepper

Instructions

  1. Rinse quinoa under cold water. Cook in a pot with 2 cups of water or vegetable broth for about 15 minutes until liquid is absorbed.
  2. Chop cucumber, red onion, and cherry tomatoes. Combine in a mixing bowl.
  3. Drain and rinse chickpeas; add them to the vegetable mix.
  4. In a small bowl, whisk together olive oil, lemon juice, cumin, paprika, salt, and pepper.
  5. Once quinoa is fluffy and slightly cooled, combine it with the vegetables and chickpeas. Drizzle dressing over the mixture and toss gently.
  6. Garnish with chopped parsley before serving.
