- 2 bell peppers (red, yellow, or green)
- 1 medium zucchini
- 1 red onion
- 2 tablespoons extra virgin olive oil
- Juice of 1 lemon

Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss chopped bell peppers, zucchini, and red onion in olive oil. Spread on the baking sheet.
- Roast vegetables for 20-25 minutes until golden brown, flipping halfway through.
- Simmer quinoa in 2 cups of water according to package instructions (about 15 minutes).
- Once cooked, combine quinoa and roasted veggies in a large bowl. Add lemon juice, salt, and pepper.
- If desired, sprinkle with feta cheese before gently tossing.
- Serve immediately or chill for an hour for enhanced flavors.
