  • 1 cup diced carrots
  • 1 cup frozen green peas
  • 2 large eggs
  • 1 cup cooked chicken (shredded) or shrimp (peeled and deveined)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 chopped spring onions

Instructions

  1. Rinse the jasmine rice under cold water until clear. Cook according to package instructions; day-old rice yields the best texture.
  2. In a large skillet, heat 2 tablespoons of oil over medium heat. Add diced carrots and frozen peas; sauté for 3-4 minutes until tender.
  3. Push veggies to one side, crack in the eggs, and scramble until just set. Mix in the cooked chicken or shrimp.
  4. Stir in the cooked rice, soy sauce, and oyster sauce. Combine well and stir-fry for about 5 minutes.
