Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup warm water
  • 1/2 cup vegan kimchi, chopped
  • 1/2 cup firm tofu, crumbled
  • 2 green onions, chopped
  • 1 tsp sesame oil
  • 1 tbsp low-sodium soy sauce
  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • 2 tbsp vegetable broth

Instructions

  1. For the dough, combine all-purpose flour and warm water in a bowl. Knead until smooth (5-7 minutes). Cover and let rest for 30 minutes.
  2. In a bowl, mix crumbled tofu, chopped kimchi, green onions, sesame oil, soy sauce, ginger, and garlic.
  3. Roll out small portions of dough into thin circles. Place a teaspoon of filling in each circle. Fold and seal the edges tightly.
  4. Steam dumplings in a pan with vegetable broth for about 8-10 minutes until translucent.
