Scale
  • 4 oz cod fillets (2 fillets)

  • 2 sprigs fresh rosemary, chopped
  • 2 cups Yukon Gold potatoes, diced
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Rinse and pat dry the cod fillets. Dice the potatoes into bite-sized pieces.
  2. Boil the potatoes: Bring a pot of salted water to a boil, add potatoes, and cook for 10-12 minutes until tender but firm.
  3. Sauté garlic & rosemary: In a skillet over medium heat, melt butter. Add minced garlic and chopped rosemary; sauté for about 2 minutes until fragrant.
  4. Add cream & seasoning: Pour in heavy cream, stir to combine with garlic and rosemary, season with salt and pepper, and simmer for 3-5 minutes until thickened.
  5. Cook the cod: Gently add cod fillets to the skillet, spoon sauce over them, and cook for 4-5 minutes on each side until they flake easily with a fork.
  6. Finish with lemon juice: Squeeze fresh lemon juice over the dish before serving alongside boiled potatoes.
