- 2 lbs ripe tomatoes (preferably San Marzano), halved
- 1 cup fresh basil leaves, torn
- 4 cloves garlic, minced
- 1 large sweet onion, chopped
- 3 cups low-sodium vegetable broth
- 2 tbsp extra virgin olive oil
- 1 tsp sugar
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash and halve the tomatoes.
- Spread tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 25 minutes until caramelized.
- In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add minced garlic and cook for another minute.
- Stir in roasted tomatoes and vegetable broth. Bring to a simmer for about 10 minutes.
- Blend the soup until smooth using an immersion blender or regular blender (allow to cool slightly if using a regular blender).
- Stir in fresh basil leaves and adjust seasoning with salt, pepper, or sugar as needed. Simmer for an additional 5 minutes before serving.
