Ingredients

  • 1 cup pumpkin puree
  • 1 cup ricotta cheese

  • 5 fresh sage leaves
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Prepare the filling by mixing pumpkin puree, ricotta cheese, Parmesan, nutmeg, salt, and pepper until smooth.
  2. Roll out the pasta dough into thin sheets using a pasta machine.
  3. Form the ravioli by placing small mounds of filling on one sheet of pasta; moisten edges with water and seal with another sheet.
  4. Boil salted water in a large pot, add ravioli, and cook until they float (about 3-5 minutes).
  5. In a pan, melt butter over medium heat, add sage leaves until crispy.
  6. Serve ravioli drizzled with sage butter sauce and extra Parmesan.
