  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for filling)
  • 1/2 cup marshmallow fluff (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes). Add egg and vanilla extract; mix well.
  3. In a separate bowl, combine rolled oats, flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients until just combined.
  4. Drop rounded tablespoons of dough onto parchment-lined baking sheets, spaced two inches apart.
  5. Bake for 10-12 minutes until edges are golden but centers are soft. Cool completely on wire racks.
  6. For the filling, beat together powdered sugar and marshmallow fluff until smooth. Spread on the flat side of one cooled cookie and sandwich with another cookie.
