Description

Lasagna roll ups combine the comforting flavors of traditional lasagna with a fun, individualized twist.   • 9 lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 2 cups marinara sauce (plus more for serving)
  • 1 cup fresh spinach (chopped)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Boil salted water and cook lasagna noodles until al dente, about 8-10 minutes. Drain and let cool.
  2. In a bowl, mix ricotta, 1 cup mozzarella, spinach, Parmesan, egg, Italian seasoning, salt, and pepper until combined.
  3. Spread marinara sauce on the bottom of a baking dish. Layer each noodle with filling and roll tightly.
  4. Place roll ups seam-side down in the dish. Top with remaining marinara sauce and mozzarella.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly.
