- 9 lasagna noodles
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- 2 cups marinara sauce (plus more for serving)
- 1 cup fresh spinach (chopped)
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Boil salted water and cook lasagna noodles until al dente, about 8-10 minutes. Drain and let cool.
- In a bowl, mix ricotta, 1 cup mozzarella, spinach, Parmesan, egg, Italian seasoning, salt, and pepper until combined.
- Spread marinara sauce on the bottom of a baking dish. Layer each noodle with filling and roll tightly.
- Place roll ups seam-side down in the dish. Top with remaining marinara sauce and mozzarella.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10-15 minutes until bubbly.
