  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain rice
  • 1 medium onion, finely chopped
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 1 tsp paprika
  • Optional: 1 cup mixed vegetables (peas or carrots)

Instructions

  1. Gather all ingredients. Finely chop the garlic and onion.
  2. Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper; cook until golden brown, about 6-7 minutes per side. Remove from skillet.
  3. In the same skillet, sauté onions and garlic until fragrant (2-3 minutes). Stir in rinsed rice.
  4. Pour in chicken broth and heavy cream; scrape up any bits stuck on the bottom of the pan.
  5. Nestle the cooked chicken back into the skillet. Cover and simmer for about 20 minutes until rice absorbs liquid and is tender.
