Instructions

- Roll chilled butter into a rectangle between parchment paper. Place on one half of the dough and fold the other half over it.
- Chill in the refrigerator for 30 minutes to relax gluten.
- Roll out the dough again into a rectangle; perform a letter fold and repeat twice more.
- Cut triangles from the dough, place chocolate chips at the base, and roll tightly from the wide end.
- Preheat oven to 375°F (190°C). Bake croissants on parchment-lined sheets for 15-20 minutes until golden brown.
