- 1 lb ground turkey or beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced

- 1 cup canned diced tomatoes (drained)
- 1 cup cooked rice
Instructions
- Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
- In a skillet over medium heat, sauté chopped onions and garlic until translucent.
- Add ground meat along with chili powder, cumin, and salt; cook until browned.
- Stir in cooked rice and diced tomatoes; allow to simmer for about 5 minutes.
- Stuff each bell pepper with the filling mixture and pack it down gently.
- Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until bubbly.
