  • 4 medium bell peppers (red, yellow, or green)
  • 1 cup shredded mozzarella cheese
  • 1 lb ground turkey or beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp salt
  • 1 cup canned diced tomatoes (drained)
  • 1 cup cooked rice

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  2. In a skillet over medium heat, sauté chopped onions and garlic until translucent.
  3. Add ground meat along with chili powder, cumin, and salt; cook until browned.
  4. Stir in cooked rice and diced tomatoes; allow to simmer for about 5 minutes.
  5. Stuff each bell pepper with the filling mixture and pack it down gently.
  6. Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until bubbly.
