Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Add the vegetable oil and eggs; mix until smooth.
  4. Fold in grated carrots and nuts if desired.
