  • 2 lbs bone-in chicken pieces (thighs or drumsticks)
  • 1 medium onion, sliced
  • 2 bell peppers, chopped (any color)
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 scotch bonnet pepper, whole (remove seeds for milder flavor)
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 cups chicken broth
  • 2 tbsp vegetable oil
  • 5 pimento seeds (allspice)
  • Salt and pepper to taste

Instructions

  1. Rinse chicken pieces under cold water and pat dry. Season generously with salt and pepper.
  2. In a large skillet, heat vegetable oil over medium heat. Add sliced onions and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic and chopped bell peppers along with the scotch bonnet pepper. Cook for another 3 minutes until softened.
  4. Increase heat slightly, add chicken pieces skin-side down, and brown on both sides for about 4-5 minutes each.
  5. Pour in soy sauce and sprinkle brown sugar over the chicken. Add thyme and pimento seeds; stir to combine.
  6. Pour in chicken broth until it covers half the chicken pieces. Reduce heat to low, cover, and simmer for about 30-40 minutes until tender.
