  • 2 cups vegetable broth
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) low-sodium black beans, drained and rinsed
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Rinse the rice under cold water until it runs clear. In a pot, combine the rinsed rice and vegetable broth; bring to a boil over medium heat.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent (about 5 minutes). Stir in minced garlic, cumin, and paprika; cook for another minute.
  3. Add the drained black beans to the skillet; mix well and cook on low for about 5 minutes.
  4. Once the rice is tender (15-20 minutes), fluff it with a fork and add it to the bean mixture. Gently fold together.
  5. Finish by squeezing fresh lime juice over the dish and adding chopped cilantro right before serving.
