- 2 cups vegetable broth
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) low-sodium black beans, drained and rinsed
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tsp ground cumin
- 1 tsp paprika
- 2 tbsp olive oil
Instructions
- Rinse the rice under cold water until it runs clear. In a pot, combine the rinsed rice and vegetable broth; bring to a boil over medium heat.
- In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent (about 5 minutes). Stir in minced garlic, cumin, and paprika; cook for another minute.
- Add the drained black beans to the skillet; mix well and cook on low for about 5 minutes.
- Once the rice is tender (15-20 minutes), fluff it with a fork and add it to the bean mixture. Gently fold together.
- Finish by squeezing fresh lime juice over the dish and adding chopped cilantro right before serving.
