Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 1 tablespoon unflavored gelatin powder
  • 1 teaspoon pure vanilla extract
  • 4 large egg yolks

Instructions

  1. In a small bowl, sprinkle gelatin over ¼ cup cold water and let bloom for 5 minutes.
  2. In a saucepan, combine milk and sugar over medium heat until warm (not boiling).
  3. Whisk egg yolks in a separate bowl. Gradually add warm milk mixture to yolks while whisking to temper them.
  4. Return the mixture to the saucepan; cook on low heat, stirring constantly until it thickens and coats the back of a spoon (5-7 minutes).
  5. Remove from heat and stir in bloomed gelatin until dissolved; add vanilla extract.
  6. Pour into serving dishes or molds and refrigerate for at least 4 hours or overnight until set.
