Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large bowl, mash the ripe bananas until smooth.
- Mix in softened butter, granulated sugar, and brown sugar until creamy.
- Beat in the eggs one at a time, then add coffee granules until fully dissolved.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the wet mixture until just combined.
- Fold in nuts if using, then pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until golden brown and a toothpick comes out clean. Let cool before slicing.
