  • 1 lb fresh lump crab meat
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 4 cups fish stock or broth
  • 1 cup heavy cream
  • ½ cup white wine (preferably dry)
  • 1 tsp dried thyme
  • ¼ tsp cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Sauté onions until translucent, then add minced garlic until fragrant.
  2. Stir in tomato paste, thyme, and cayenne pepper; cook for about two minutes.
  3. Deglaze the pot with white wine, scraping up any bits stuck to the bottom. Simmer for three minutes.
  4. Add fish stock or broth; let it meld together for about five minutes.
  5. Gently fold in crab meat and shrimp; cook until the shrimp turns pink.
  6. Stir in heavy cream; season with salt and pepper to taste.
  7. Ladle into bowls and garnish with fresh herbs if desired.
