  • 24 ladyfingers
  • 1 cup strong brewed espresso, cooled
  • 8 oz mascarpone cheese
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp rum or coffee liqueur (optional)

Instructions

  1. Brew a strong cup of espresso and allow it to cool slightly. Stir in rum or liqueur if desired.
  2. In a mixing bowl, combine mascarpone cheese, sugar, and vanilla extract. Mix with an electric mixer until smooth.
  3. In another bowl, whip heavy cream until soft peaks form. Gently fold into the mascarpone mixture until fully combined.
  4. Quickly dip each ladyfinger into the cooled espresso mixture and layer them in your serving dish.
  5. Spread half of the mascarpone filling over the first layer of ladyfingers, then repeat with another layer of dipped ladyfingers and the remaining filling.
  6. Chill in the refrigerator for at least four hours or overnight. Dust with cocoa powder before serving.
