- 4 large bell peppers
- 2–3 boneless skinless chicken breasts
- 1 cup buffalo sauce
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 green onions, chopped
- 1 tsp garlic powder
- 1 tsp paprika
Instructions
- Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and set aside.
- In a skillet over medium heat, cook the chicken until golden brown and no longer pink, about 5-7 minutes per side. Shred the cooked chicken in a bowl.
- Mix in buffalo sauce, cream cheese, garlic powder, and paprika until well combined.
- Stuff each bell pepper with the chicken mixture, topping generously with shredded cheddar cheese.
- Place the stuffed peppers upright in a baking dish; add a splash of water at the bottom and cover with foil. Bake for 25 minutes.
- Remove the foil and bake uncovered for an additional 10-15 minutes until cheese is bubbly. Garnish with chopped green onions before serving.
