Buffalo Chicken Stuffed Peppers are a spicy and satisfying dish filled with tender chicken, creamy cheese, and zesty buffalo sauce—perfect for game days or family dinners!

  • 4 large bell peppers
  • 23 boneless skinless chicken breasts
  • 1 cup buffalo sauce
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and set aside.
  2. In a skillet over medium heat, cook the chicken until golden brown and no longer pink, about 5-7 minutes per side. Shred the cooked chicken in a bowl.
  3. Mix in buffalo sauce, cream cheese, garlic powder, and paprika until well combined.
  4. Stuff each bell pepper with the chicken mixture, topping generously with shredded cheddar cheese.
  5. Place the stuffed peppers upright in a baking dish; add a splash of water at the bottom and cover with foil. Bake for 25 minutes.
  6. Remove the foil and bake uncovered for an additional 10-15 minutes until cheese is bubbly. Garnish with chopped green onions before serving.
