Ingredients

  • 2 Red Bell Peppers
  • 1/2 cup Almonds
  • 3 Garlic Cloves
  • 1 Tomato (fresh or canned)
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Smoked Paprika
  • Salt & Pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C). Halve the bell peppers, remove seeds, and roast cut side down on a parchment-lined baking sheet for 20-25 minutes until charred. Allow to cool.
  2. In a dry skillet over medium heat, toast the almonds until golden brown (5-7 minutes). Add minced garlic during the last minute to avoid burning.
  3. Once the peppers have cooled, peel off the skins and combine them with toasted almonds, garlic, tomato, olive oil, red wine vinegar, smoked paprika, salt, and pepper in a food processor. Blend until smooth yet slightly chunky.
  4. Taste and adjust seasoning as desired. Serve immediately with crusty bread or grilled meats.
