- 2 Red Bell Peppers
- 1/2 cup Almonds
- 3 Garlic Cloves
- 1 Tomato (fresh or canned)
- 1/4 cup Extra Virgin Olive Oil
- 2 tbsp Red Wine Vinegar
- 1 tsp Smoked Paprika
- Salt & Pepper to taste
Instructions
- Preheat your oven to 450°F (230°C). Halve the bell peppers, remove seeds, and roast cut side down on a parchment-lined baking sheet for 20-25 minutes until charred. Allow to cool.
- In a dry skillet over medium heat, toast the almonds until golden brown (5-7 minutes). Add minced garlic during the last minute to avoid burning.
- Once the peppers have cooled, peel off the skins and combine them with toasted almonds, garlic, tomato, olive oil, red wine vinegar, smoked paprika, salt, and pepper in a food processor. Blend until smooth yet slightly chunky.
- Taste and adjust seasoning as desired. Serve immediately with crusty bread or grilled meats.
