- 3–4 boneless, skinless chicken breasts
- 1 cup plain yogurt
- 4 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- cumin
- coriander
- garam masala
- 1 can (15 oz) tomato puree
- 1 cup coconut milk or heavy cream
- Fresh cilantro for garnish
Instructions
- Marinate the chicken by mixing yogurt, garlic, ginger, cumin, coriander, and salt in a bowl. Add the chicken pieces and coat well. Let marinate for at least 30 minutes.
- Heat oil in a skillet over medium-high heat. Add the marinated chicken and sear until golden brown on all sides (about 6-8 minutes).
- Add chopped onions to the skillet and cook until translucent (around 5 minutes).
- Stir in the tomato puree and remaining spices. Simmer gently for about 10 minutes until thickened.
- Mix in coconut milk or heavy cream and cook for an additional 5 minutes.
- Fold the seared chicken back into the sauce and let it simmer together for another 10 minutes.
