Description

A delightful Indian classic featuring tender chicken simmered in a rich, creamy tomato sauce. Perfect for any weeknight dinner or special occasion!


Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • cumin
  • coriander
  • garam masala
  • 1 can (15 oz) tomato puree
  • 1 cup coconut milk or heavy cream
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken by mixing yogurt, garlic, ginger, cumin, coriander, and salt in a bowl. Add the chicken pieces and coat well. Let marinate for at least 30 minutes.
  2. Heat oil in a skillet over medium-high heat. Add the marinated chicken and sear until golden brown on all sides (about 6-8 minutes).
  3. Add chopped onions to the skillet and cook until translucent (around 5 minutes).
  4. Stir in the tomato puree and remaining spices. Simmer gently for about 10 minutes until thickened.
  5. Mix in coconut milk or heavy cream and cook for an additional 5 minutes.
  6. Fold the seared chicken back into the sauce and let it simmer together for another 10 minutes.
