Description

Indulge in this easy blackberry cheesecake—a creamy, sweet dessert bursting with fresh berry flavor, perfect for any occasion.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • 1 cup fresh blackberries
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press firmly into the bottom of a 9-inch springform pan.
  2. Bake the crust for about 10 minutes until golden brown. Let it cool completely.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar and sour cream; mix until silky.
  4. Stir in vanilla extract and gently fold in crushed blackberries, keeping some swirls visible.
  5. Pour the filling into the cooled crust and spread evenly. Bake for 50-60 minutes until set around the edges but slightly jiggly in the center.
  6. Cool completely and refrigerate for at least four hours before serving. Serve chilled with extra blackberries if desired.
