Ingredients

  • Corn or flour tortillas
  • Red enchilada sauce
  • Shredded cheese (Cheddar and Monterey Jack)
  • Onion
  • Garlic
  • Cumin and chili powder

Instructions

  1. Preheat your oven to 350°F (175°C). Chop the onion and mince the garlic.
  2. In a skillet over medium heat, brown 1 lb of ground beef with the chopped onion for 5-7 minutes until onions are translucent.
  3. Stir in minced garlic, cumin, and chili powder, cooking for an additional 1-2 minutes until fragrant.
  4. Spread a layer of red sauce in a baking dish. Fill each tortilla with the beef mixture and sprinkle cheese before rolling tightly. Place seam-side down in the dish.
  5. Pour remaining red sauce over the enchiladas and top with more cheese. Cover with foil and bake for 20 minutes, uncovering for an additional 10 until cheese is bubbly.
