Ingredients

  • 34 boneless, skinless chicken breasts
  • 34 cloves fresh garlic, minced
  • 4 cups chicken broth
  • 8 oz cream cheese
  • 9 oz tortellini (cheese or chicken)
  • 1 cup frozen spinach, thawed and drained
  • 2 tsp Italian seasoning
  • Grated Parmesan cheese for garnish

Instructions

  1. Dice chicken into bite-sized pieces and mince the garlic.
  2. Sauté minced garlic in a skillet over medium heat until fragrant (about 1 minute).
  3. Add diced chicken to the skillet and cook until lightly browned on all sides.
  4. Transfer the mixture to your CrockPot. Add chicken broth, cream cheese, Italian seasoning, and spinach; stir to combine.
  5. About 30 minutes before serving, gently stir in the tortellini.
  6. Cover and cook on low for 4 hours or high for 2 hours until chicken is tender and tortellini is cooked through.
  7. Serve hot, garnished with grated Parmesan cheese.
