Ingredients

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.

  3. In another bowl, beat eggs and sugar until light and fluffy; then mix in milk.
  4. Gradually add dry ingredients to wet ingredients until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring to a wire rack.
  7. For frosting, beat heavy cream until soft peaks form, then fold in mascarpone and powdered sugar.
