Ingredients

  • 1 lb lean ground beef
  • 1 cup fresh Thai basil leaves
  • 3 cloves garlic, minced
  • 1 cup shredded carrots
  • 3 tbsp low-sodium soy sauce
  • 8 rice paper wrappers
  • 2 tbsp lime juice

Instructions

  1. Chop garlic and shred carrots. Have all ingredients within reach.
  2. In a skillet over medium heat, brown the ground beef until no longer pink. Add garlic and sauté for about 1 minute, then stir in shredded carrots.
  3. Mix in soy sauce and lime juice until well combined.
  4. Dip each rice paper wrapper in warm water for about 15 seconds until soft.
  5. Place a spoonful of beef mixture on one end of the wrapper. Fold edges tightly and roll up.
  6. Pan-fry rolls in oil until golden brown on both sides for added crunch.
