- 1 lb lean ground beef
- 1 cup fresh Thai basil leaves

- 1 cup shredded carrots
- 3 tbsp low-sodium soy sauce
- 8 rice paper wrappers
- 2 tbsp lime juice
Instructions
- Chop garlic and shred carrots. Have all ingredients within reach.
- In a skillet over medium heat, brown the ground beef until no longer pink. Add garlic and sauté for about 1 minute, then stir in shredded carrots.
- Mix in soy sauce and lime juice until well combined.
- Dip each rice paper wrapper in warm water for about 15 seconds until soft.
- Place a spoonful of beef mixture on one end of the wrapper. Fold edges tightly and roll up.
- Pan-fry rolls in oil until golden brown on both sides for added crunch.
