Ingredients

  • Fresh jalapeños
  • Sharp cheddar cheese
  • Cream cheese
  • Sourdough bread
  • Unsalted butter

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve jalapeños, place cut-side down on the sheet, and roast for 15 minutes until charred.
  3. In a bowl, mix softened cream cheese and shredded cheddar until smooth.
  4. Spread the mixture onto one side of two slices of sourdough. Add roasted jalapeño halves and close the sandwich.
  5. Heat a non-stick skillet over medium heat, melt butter, and grill sandwiches for 3-4 minutes per side until golden brown and cheese is melted.
