Description

Indulge in this creamy rice pudding made with leftover cooked rice, a perfect blend of nostalgia and comfort in every spoonful.


Ingredients

  • 2 cups cooked rice
  • 4 cups whole milk (or alternative)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup raisins (optional)
  • 1 tablespoon butter (optional)

Instructions

  1. In a medium saucepan, combine cooked rice, milk, sugar, salt, and cinnamon over medium heat. Stir until heated through.
  2. Once bubbling at the edges, add vanilla and optional raisins. Stir to combine.
  3. Lower heat to medium-low and simmer uncovered for about 20 minutes, stirring occasionally until thickened.
  4. Adjust sweetness and consistency by adding more sugar or milk as desired.
  5. Remove from heat, stir in butter if using, and serve warm or chilled with a sprinkle of cinnamon on top.
