Description

Sweet potato muffins are a deliciously moist treat, blending natural sweetness and warm spices, perfect for breakfast or as a snack.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1 ½ cups all-purpose flour (or whole wheat flour)
  • 1 tsp baking powder
  • 1 tsp cinnamon (optional nutmeg or ginger)
  • ½ cup brown sugar
  • 2 large eggs
  • ⅓ cup milk (dairy or non-dairy)
  • 1 tsp vanilla extract
  • ¼ cup melted butter or vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
  2. Bake sweet potatoes at 400°F (200°C) for about 45 minutes until tender. Once cooled, scoop out and mash.
  3. In a large bowl, whisk together flour, baking powder, cinnamon, and brown sugar.
  4. In another bowl, mix eggs, milk, melted butter (or oil), vanilla extract, and mashed sweet potatoes until smooth.
  5. Fold wet ingredients into dry ingredients until just combined—lumps are okay.
  6. Fill muffin cups about three-quarters full and bake for 20-25 minutes until golden brown.
