- 4 medium sweet potatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup plain Greek yogurt
- 1 tsp cumin
- 1 tsp chili powder
- Salt to taste
Instructions
- Preheat oven to 400°F (200°C). Wash and pierce sweet potatoes with a fork. Place on lined baking sheet.
- Bake for 45-60 minutes until soft and fragrant.
- While baking, mix black beans, corn, cumin, chili powder, half of the cheese, and salt in a bowl.
- Once cool enough to handle, slice sweet potatoes lengthwise and fluff insides with a fork.
- Stuff each potato with the filling mixture and top with remaining cheese.
- Return to oven for an additional 10-15 minutes until heated through and cheese is melted.
- Drizzle Greek yogurt over each stuffed potato before serving.
