Ingredients

  • 4 medium sweet potatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and pierce sweet potatoes with a fork. Place on lined baking sheet.
  2. Bake for 45-60 minutes until soft and fragrant.
  3. While baking, mix black beans, corn, cumin, chili powder, half of the cheese, and salt in a bowl.
  4. Once cool enough to handle, slice sweet potatoes lengthwise and fluff insides with a fork.
  5. Stuff each potato with the filling mixture and top with remaining cheese.
  6. Return to oven for an additional 10-15 minutes until heated through and cheese is melted.
  7. Drizzle Greek yogurt over each stuffed potato before serving.
