- 4 large bell peppers
- 2 cups cooked rice (white or brown)
- 1 pound ground meat (beef or turkey) or 1 can black beans
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup shredded cheese (optional)
- Cumin and paprika to taste
Instructions
- Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
- In a skillet, sauté chopped onions in oil until soft; add minced garlic until fragrant.
- Combine cooked rice, diced tomatoes, ground meat (or beans), cumin, and paprika in the skillet; mix well.
- Generously stuff each pepper with the filling mixture.
- Optionally, top with shredded cheese before placing the peppers upright in a baking dish.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until golden brown.
