Ingredients

  • 4 large bell peppers
  • 2 cups cooked rice (white or brown)
  • 1 pound ground meat (beef or turkey) or 1 can black beans
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese (optional)
  • Cumin and paprika to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds.
  2. In a skillet, sauté chopped onions in oil until soft; add minced garlic until fragrant.
  3. Combine cooked rice, diced tomatoes, ground meat (or beans), cumin, and paprika in the skillet; mix well.
  4. Generously stuff each pepper with the filling mixture.
  5. Optionally, top with shredded cheese before placing the peppers upright in a baking dish.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10-15 minutes until golden brown.
