Ingredients

  • 4 bell peppers (red, yellow, or green)
  • 1 pound lean ground beef
  • 1 cup cooked rice (jasmine or basmati)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (mozzarella or cheddar)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant (about 3 minutes).
  4. Add ground beef, seasoning with salt and pepper, and cook until browned (5–7 minutes).
  5. Mix in cooked rice, tomato sauce, spices, and half of the shredded cheese until combined.
  6. Stuff each pepper with the mixture, reserving some space for cheese on top.
  7. Cover with foil and bake for 30 minutes; then remove foil and add remaining cheese. Bake for an additional 10 minutes until cheese is melted.
