- 4 bell peppers (red, yellow, or green)
- 1 pound lean ground beef
- 1 cup cooked rice (jasmine or basmati)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (mozzarella or cheddar)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
- In a skillet over medium heat, sauté onion and garlic until fragrant (about 3 minutes).
- Add ground beef, seasoning with salt and pepper, and cook until browned (5–7 minutes).
- Mix in cooked rice, tomato sauce, spices, and half of the shredded cheese until combined.
- Stuff each pepper with the mixture, reserving some space for cheese on top.
- Cover with foil and bake for 30 minutes; then remove foil and add remaining cheese. Bake for an additional 10 minutes until cheese is melted.
