Ingredients

  • 1 cup plain Greek yogurt
  • 2 stalks celery, diced
  • 1 small red onion, finely chopped
  • 2 tablespoons fresh herbs (dill or parsley)
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: nuts or seeds for added crunch

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper, then bake for 25-30 minutes until fully cooked. Allow to cool before shredding.
  2. In a large bowl, combine Greek yogurt and lemon juice. Season with salt, pepper, and any desired spices.
  3. Dice celery and red onion. Chop fresh herbs.
  4. Shred the cooled chicken into bite-sized pieces and add it to the bowl with the dressing and veggies.
