- 2 cloves fresh garlic
- 1 cup diced carrots
- 2 celery stalks, chopped

- 6 cups low-sodium chicken broth

- 1 package store-bought gnocchi
- thyme, salt, and pepper to taste
Instructions
- In a large pot over medium heat, sauté minced garlic in olive oil until fragrant. Add diced onions and cook until translucent.
- Stir in carrots and celery; cook for about 5 minutes until slightly softened.
- Add whole chicken breasts and chicken broth; bring to a gentle boil then reduce to simmer for 20 minutes.
- Remove chicken, shred it once cooled, and return to the pot. Add spinach and gnocchi; cook until the gnocchi float (about 3-5 minutes).
- Gradually pour in heavy cream while stirring; season with thyme, salt, and pepper. Let simmer for an additional 5 minutes.
