  • 3 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 16 oz store-bought gnocchi
  • 2 cups fresh spinach or kale
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat a large pot over medium heat. Add a splash of olive oil and sauté diced chicken seasoned with salt and pepper until golden brown (5-7 minutes). Remove from pot.
  2. Add chopped onions, carrots, and celery to the same pot; cook until softened (4-5 minutes). Stir in minced garlic for about 30 seconds until fragrant.
  3. Pour in chicken broth along with thyme and oregano; bring to a gentle simmer.
  4. Return the chicken to the pot along with uncooked gnocchi. Let simmer until gnocchi float to the surface (about 5 minutes).
