  • 3 lbs beef chuck roast
  • 6 dried guajillo chilies
  • 1 tbsp cumin seeds
  • 1 large onion
  • 4 garlic cloves
  • 4 cups low-sodium beef broth
  • Corn tortillas
  • Fresh cilantro and diced onions for topping

Instructions

  1. Cut the beef chuck roast into large chunks and season with salt and pepper.
  2. Soak guajillo chilies in hot water for about 15 minutes until softened.
