  • 34 pounds chuck roast
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 large onion
  • 5 garlic cloves
  • 4 cups beef broth
  • Corn tortillas
  • Fresh cilantro, diced onions, lime wedges, avocado for topping

Instructions

  1. Soak guajillo and ancho chiles in hot water for 15 minutes until softened; drain.
  2. Blend soaked chiles with garlic, onion, cumin, oregano, salt, pepper, and one cup of beef broth until smooth.
